Most interesting job before coming to Steersons?
When I was just 20 years of age I was given the opportunity to work in the Channel Islands in Jersey as a Sous Chef for the first time. I lived above the restaurant for four months and rarely had a day off. It was my first time working away from home and a great learning experience.

Favourite career highlight?
When I was an apprentice I was lucky enough to have cooked a dish for an AA inspector in my first restaurant in Belfast (The Metro, Crescent Townhouse). That night resulted in us being awarded with our first AA Rosette which was a very proud moment. More recently, the impromptu standing ovation that me and my team received upon our very last dinner at Steersons Bridge Street is something that will stay with me for a very long time.

Favourite food?
My mum’s Irish stew. Nuff said.

Dream restaurant to visit?
Eleven Madison Park NY, the Chef Daniel Humm produces the type of food that I dream of cooking and eating, for me that says it all.

If I wasn’t in hospitality I would be…
I would have liked to be a Doctor, but I didn’t have the patience.

Prior to Steersons where did you work?
The last job I held was Director of Events at the Beverly Wilshire Hotel, Beverly Hills (the “Pretty Woman” hotel). Being in LA we had our fair share of celebrity events, Tom Cruise, Beyonce, Taylor Swift, Bieber, Charlize Theron, Oprah, Ellen DeGeneres, President Barack Obama. It was an eye opener!

Favourite career highlight?

A couple of weeks before the Grammy’s, we were told we would be hosting a small after party. Party ended up being for Prince, (and a 10 piece band) playing in a room no bigger than a large living room! 

Many years ago, I was appointed the private butler for Sultan of Brunei during his trip to Sydney. Nice guy!

Favourite Food or Drink?
Negroni!

Dream restaurant to visit?
I can highly recommend The Bazaar, by José Andrés (Los Angeles, CA) it’s an experience, just as much as it is a meal. The Wagyu Philly Cheese Steak Sandwich is the highlight on the menu! If ever in LA, it’s a MUST!!

If I wasn’t in hospitality I would be…
Professional golfer………… love playing, but average at it!
